Hey guys today I am making a delicious Masala Focaccia which is perfect for This festive season So for the dough I have got 500 grams of Strong white bread flour and to this I'm Adding 100 grams of fine salt and 100 Grams of fast action yeast just give it A little mix and then to this I'm gonna Add 380 mL of water I am just using Slightly lukewarm water usually I just Use tap water but the kitchen is really Really cold today so you can knead this By hand it is a slightly stickier dough Than normal bread much sticky actually But I'm just mixing it by hand while I Add the water once I've added all the Water I'm going to put this on a stand Mixer and knead this for around 8 to 10 Minutes and the dough will still be very Wet but it will just become more Stretchy and much smoother Once the Dough has has been kneading for 10 Minutes I'm just going to transfer it to This plastic box which is rectangle Shape I'm adding around 50 to 60 mL of Olive oil to this and then just making Sure that The bowl the plastic box is you can use Any box you like It's properly coated in the oil So that the dough kind of doesn't get to Stick anywhere so that's what I'm making Sure of And I will show you how beautifully
Sticky and stretchy the dough is Um and you just kind of look at that Look at that Just kind of transfer it in this oiled Box and I'm going to cover and prove This for a couple of hours the kitchen Is really cool so I'm hoping there is a Bit of sun coming in so I'm hoping to Get this nice and improved In a couple of hours so Yeah that's how it's looking So I've got a 20 by 30 roughly 20 by 30 Centimeters Baking tin and I'm just adding A good glug of oil you really need lots Of oil in this this bread is all about Olive oil and just making sure that the Sides are properly old too because if You don't oil it properly the bread will Then Stick To the tin and obviously we don't want That so good amounts of oil and then you Can see that the dough has risen and It's double the size now and because of The oil that we added on the sides you Can still see a little bit of it and I'm Just gonna As carefully as I can Transfer this without kind of Deflating The door too much Oh Yeah this is why we use that oil
And then just Stretch as much as you can To the corners of the tin And now I'm going to let this Brew for Another hour Without kind of Poking too much in it just guide the Door to the corners look at that all the Amazing air bubbles I'm just going to Cover it with the cloth on top and leave It aside what has been an hour Just about in the book oh just to let You know the written recipe can be found In chetna's easy baking now there is a Lovely masala Masala Focaccia Now I was going to make the Masala but I I've got lots of things going on because I'm having a festive party for which I'm Making this bread so I run out of time So then I went into the cupboard and Found some sun-dried tomato pesto Brilliant let's oh look at that that has Definitely increased in size now what we Need to do is the fun part just Oh first of all get some oil in your Hands Really important And then Just make some holes in the Focaccia Without disturbing it loads But making sure there are dense In there Now I can just leave it as it is alone
But I want Um Some lovely pesto so I'm just gonna Put the tiniest not loads Just uh little pieces of pesto All over The bread it's exactly how I have done The Masala Focaccia instead of pesto I've used masala Um I wish I had not run out of time but This is going to be equally delicious Have any of you got my book Chetna's easy baking and I get lots of Pictures on Instagram on Facebook so if You have made something from the recipe Book let me know in the comments if you Have some other books of mine and you Cook something regularly I would love to know Um Your thoughts Oh this is gonna be good there's so many Things you can do with focacci I'm sure You've seen many recipes putting Rosemary garlic onions all sorts of Decoration festive decoration you can do On that anyways now this is going to go In a really hot 220c oven And this is going to go in a hot oven For 25 minutes until nice and Beautifully golden Hot oven Right the timer has gone off Oh
Can you hear it It smells incredible now I'm Gonna Leave It to kind of sit in the tin for five Minutes uh before I take it out I'm Gonna serve it tomorrow at the party so I'm not gonna chop cut it up Um Um and it's also it's piping hot so yeah I'm gonna take it out in 10 minutes five Minutes I said I said fine that's right I just want to show you the bread itself It is Crispy on the outside Really fluffy it hasn't got as many air Bubbles today usually it has got really Big air bubbles but it has been so cool And normally my kitchen is warm but Today has been really cold Um Never mind it's still look at that it's Still got lots of air in it's still like Pillowy fluffy Olive oily And crispy on your top Come on This With any sorts of tips Um at the side of anything with some Cheeses this is this is brilliant I hope You will give this a good don't forget To subscribe I'll see you soon For another new recipe very soon And that flavor from the Sun-dried tomato is delicious
