咖哩牛腩:
材料:
牛坑腩1斤
薯仔2個
紅蘿蔔1個
椰漿1包
咖哩醬1包
咖哩粉少許
處理:
1. 大火煲1煲滾水,原件牛腩放入滾水滾5分鐘。
2. 牛腩用清水沖洗乾淨。
3. 每一條坑腩1開2。
4. 每個薯仔1開2。
5. 紅蘿蔔切一舊舊,要分開蒸。
烹調:
1. 用大火在鑊中燒熱1湯匙油。
2. 放牛腩落鑊爆香2分鐘去羶味。
3. 轉慢火,加入咖哩醬後,轉中火炒勻。
4. 加入少許咖哩粉炒勻。(此程序可以跳過。)
5. 加入薯仔。
6. 加入1湯匙糖。
7. 加入滾水,蓋過牛腩面,煮滾。
8. 滾起後,轉中慢火,炆20分鐘。
9. 過了20分鐘,熄火,焗20分鐘。
10. 過了20分鐘,試一試薯仔及牛腩是否已夠腍,如果是,炆多10分鐘就可以了。如果不是, 就再炆多30分鐘。
11. 在另一邊爐,大火蒸紅蘿蔔10分鐘。
12. 牛腩已炆好,試一試味。
13. 加入1包椰漿,中和辣味,攪勻,完成,上碟。
Braised beef brisket with curry:
Ingredients:
Beef brisket 1 catty
Potatoes (large) 2 Nos.
Carrot 1 No.
Coconut milk 1 No.
Curry paste 1 No.
Curry powder little
Preparation:
1. Heat up a pot of water. Put beef into water boiling for 5 minutes.
2. Rinse beef with tap water thoroughly.
3. Divide each brisket into 2 shares.
4. Divide each potato into 2 shares.
5. Cut carrot into pieces, to be steamed separately.
Steps:
1. Heat up 1 tbsp oil at high flame in wok.
2. Fry beef in wok for 2 minutes in order to remove unpleasant smells and tastes.
3. Add curry paste after turning to medium ~low flame. Stir well.
4. Add little curry powder and stir well. (This step can be skipped.)
5. Add potatoes.
6. Add 1 tbsp sugar.
7. Add boiled up water, cover up the top of beef. Wait for boiling up.
8. Turn to medium~low flame after boiling up, braise for 20 minutes.
9. Turn off fire after braising 20 minutes.
10. Check if beef and potatoes are soft enough. If yes, braise for 10 minutes is OK. If not, braise for 30 minutes more.
11. Steam the carrot at high flame for10 minutes on the other side.
12. Beef has been braised well. Get a taste of it.
13. Mix coconut milk with beef to neutralize spiciness of curry. Mix well. Complete. Serve.
