Hey guys welcome back to my channel it's The last video before this Christmas I Am so excited this is my last recipe Before uh Christmas uh this year and I Am sharing one of the things I only make Once over the festive season and those Are Min spies so I'm not a big fan of Mint spice because I think the ones that You buy from shops are too mincy like There's too much of that mince meat in The middle it's too sweet and I don't Like too much kind of too many raisins And fruits in the in my desserts so I Make a really nice version I've shared a Couple of variations over the channel Over the years uh but this one is from My friend Millie Taylor who is a Brilliant Chef I will leave the link to Her Instagram in the description below You must check out her recipes and her Food is beautiful and this is browned by Butter French pan Mint spice so let's get baking and Before that don't forget to subscribe Hit the Bell button so you get a Notification every time I share a new Recipe let's get baking So guys I just want to mention one Important thing I'm going to tell you The quantities and those are the correct Quantities that much the ingredients I'm Going to tell you makes around 12 to 14. Now you might notice that my quantities Are much more than the ones I'm seeing
On camera that's because I've just Doubled them because I want around 24 to 26 minutes pies so that's it so uh That's what I'm making The first thing I'm going to do is brown This butter so I've got here you have to Take 150 grams of unsalted butter I've Just cut it in cubes and now it's like Making ghee basically so Um I'm just going to cook this until It's nice and brown if you take a light Color pan then you can actually kind of See Um when the butter is brown if you take A dark pan then it makes it slightly Difficult Once it has melted you can see that it Starts to kind of Bubble Up and you Don't have to do anything to this just Let it continue to cook until it changes Color I looked away for one second I'm not Even kidding oh no stop please stop oh Seriously guys I didn't listen to my own Advice and I left this spot for a minute You can see it's kind of frothy bubbled Up you can see that the milk solids are Now golden this is when you turn the Heat off I which I have and I'm just Going to Um kind of Sieve this into a bowl so that it cools Down slightly quicker and then I can Make my
Um Pie sooner so that's the milk solids Left in the bowl in the pan sorry and This is how our burnt butter Sorry not bun butter brown butter is Looking look at that Absolutely stunning I'm gonna let this Cool down for a couple of hours so Moving on to the dough I have got here 150 grams of plain flour I'm gonna add 25 grams of caster sugar to this Good pinch of salt goes in Next goes in my favorite spice cardamom I'm just adding quarter teaspoon of that And then just give it a mix before Adding half the quantity of butter so That's 150 flour and that should be 75 Grams of unsalted really chilled butter I've chopped it into cubes and all I'm Going to do is mash it up with the hands You could use a food processor I always Do this by hand just rub it well so you Get like a bread crummy texture and once We've got that bread crummy kind of Texture I'm gonna add an egg yolk to This Foreign I might just add a couple of drops of Water to this So we want to keep the pastry quite Short so it doesn't need kind of Kneading Um definitely need some liquid in this So I'm just going to add
Don't overdo it just this is one Tablespoon of water See how far this goes So I added two tablespoons of water and This is coming together Very very nicely just bring it together And we don't need to knead this just Bring it together we keep it really nice And short and then wrap it with some Cling film or some wax paper and then Leave it in the fridge I'm gonna just Let it rest for half an hour In the same Bowl I haven't washed it off The dough I'm going to make some French Penny while the dough is chilling so I've got 100 grams of caster sugar in Here I am going to add my cool down Brown butter now the kitchen is so cool That it has set in two hours time it has Slightly set which is quite nice Actually Do this sugar I'm gonna add a pinch of Salt and also 100 grams of ground Almonds so you just finely Blitz almonds And now I'm going to add the brown Butter again 100 grams of that So once um because we have browned 150 Grams of butter what is left should Automatically be 100 grams of brown Butter in the end And also adding in uh one tablespoon of Plain flour to it and then goes in one Medium egg And if you have any oranges lying at
Home just add the zest of An orange just to add the freshness from It A bit more kind of festive and the only Thing left to do is to mix it up and Once it's combined then I'm going to Cover and leave it to rest in the fridge On the side of the dough Smells so so lovely So the dough has rested for an hour and It's still not rock solid which is what We want and the French pan has also Rested oh let me get the jar of ready Mince meat once again Right here it is Um I don't make my own mince meat Because I use so little one jar is Plenty and I'll still I probably will Have some left over let's see Um so yeah they everything's rested my Mince mince meat is ready so I'm taking A baking sheet because it's a it could Get a bit sticky I'm taking a baking Sheet sorry baking paper You can't do this directly on the Surface like a clean surface but I'm Just going to take that Take a portion of the dough and then Roll it in between two baking papers I'm just using some cookie cutters Because I haven't got shallow Um kind of muffin trays or cupcake trays These are my normal these are the only Trays I've I have and I've had them for
Like 15 20 years I've these are really Old so I didn't want to buy new shallow Ones just for the mince pie so I'm just Going to use that Um you've could you pass me a measuring Tape I just want to tell people how big This is Because I know somebody will message Saying What's this What's the size of the cookie cutter Um one second You can cut it So I'm using three and a half inch or Around nine centimeter cookie cutter I'm Just gonna put a little bit of flour so It doesn't stick I think I can get four Out of this Um So in goes the I'm just going to cut first wait it's Very thick Goes into The cupcake sandwiches perfect because You don't want it I don't want extremely Deep Um minced spice that is perfect so I'm Just gonna cut a few more I've got loads Of pastry so I'm just going to show you Once I've cut and filled all of them So the quantity that I have told you Should make around 12 or 14 Um kind of mince pies now this is a tray Of 12 and I've I've made 11 but there is
Mixture left for one more I will do that In a minute let me just put this in the Oven first Um and look at that come close and I'm Going to fill it up so first things you Can see that they are not till the top So they'll be nice and shallow Um kind of mint spice then I'm just Going to put a teaspoon of Um Mincemeat in there Which is going to be just Enough Don't put any more if you like less Kind of lighter mint spice this is Perfect amount and now for The French pan So I'm just gonna Put a scoop like a heaped teaspoon On top of each Of the and spread it in a second and Just with the Palette knife Spread it And cover The mince meat and once that is done Just put a few flaked almonds on top and I've got the oven heating up nicely at 180c or 160 fan and this should take Around 25 minutes Um To bake Oh they are looking perfect I have not Had a single men's buy and it is
Christmas I can't believe I have stayed Away from all the shop Port ones because I loved them so much so 25 minutes and They should be out and I cannot wait So um the timer went off in 25 minutes And I felt that it needed like a tiniest Bit more color so I've let them bake for A total of 30 minutes now I'm gonna Leave them Um in the tin for five minutes before I Get them out look at them oh my God so Good Oh look I want to say a few things If I may Look they are so shallow can you see They are not like those Phantom in spies Nothing wrong with those if you like men Spice like that perfect but for me that Is the perfect Kind of depth for the main spice And they smell Incredible absolutely incredible look at That Look at the color on it The smell The beauty Absolutely Stunning Hmm The best There's a hint of cardamom There's lots of Orange Full of almonds On just a thin layer of mince meat
