Introduction
Kolhapuri Egg Curry is a spicy, hot and finger-licking-good curry recipe. This Maharashtrian curry is also known as Anda Rassa. This is a very simple and easy egg curry recipe that hits all the right spots. It is the perfect recipe for a healthy weeknight dinner & is best served with steamed rice or with any Indian Bread and onions on the side.
Preparing the Kolhapuri Masala-
1st Stage
2 tbsp Coriander Seeds
2 tsp Cumin Seeds
3/4 tsp Sesame Seeds
1/2 tsp Mustard Seeds
1 tsp Carom Seeds
1 tsp Stone Flower
3 Bay Leaves
10 Dry Red Chillies
Salt
2nd Stage-
2 tbsp Oil
2 slice Dry Coconut
4 Green Cardamom
2 Black Cardamom
3 Star Anise
3-4 Cloves
1/2 inch Nutmeg
1/2 inch Maize
1 & 1/2 inch Cinnamon Stick
1 tsp Black Peppercorn
1/4 tsp Fenugreek Seeds
1/4 tsp Asafoetida
1/2 tsp Turmeric Powder
1 & 1/2 tbsp Red Chilli Powder
For the Curry
2 tbsp Oil
1 & 1/2 tbsp Ginger-Garlic (chopped)
3 Onion (chopped)
2 tbsp- Kolhapuri Masala
1 & 1/2 cup Water
6 Eggs (boiled)
1 tsp Lime Juice
Coriander Leaves (for garnish)

Hi guys! This is your
Punjabi Chef Prateek Dhawan Not just any Dhawan, today I'm the one Who is going to cook a nice
Egg Curry, Kolhapuri style. So let's start cooking. For Egg Curry Kolhapuri style, First we are going to
make the Kolhapuri Masala. The Kolhapuri Masala will
be made in two stages First we will dry-roast the Masala. First, I will switch on the gas. As the pan starts to heat up, first I
am going to add Coriander Seeds. Cumin Seeds, Sesame Seeds, Mustard Seeds, Carom Seeds, Stone Flower, Bay Leaves, Dry Red Chillies And to balance the heat, I
am going to add some Salt. So guys, I'm going to roast
these Masala for at least 2 minutes And then I'm going to keep it for cooling. In the meanwhile, we will make
the Kolhapuri Masala second stage. For the second stage of Kolhapuri Masala Again I'm going to switch on the gas Add Oil, at least 2 tbsp And once the Oil heats up I'll start adding the spices. First, I'm going to add Dry Coconut. Green Cardamom pods, Black Cardamom pods, The star ingredient, Star Anise. Cloves, Nutmeg, Maize, Cinnamon Stick,
Black Peppercorn And last, Fenugreek Seeds. Our second step of Kolhapuri
Masala spices are also roasted And I'm going to transfer them into a bowl. While the spices cool down, We will boil the Eggs till that time. The Eggs are almost ready And the spices have also cool down. Now I'm going to grind
the spices into a fine powder. I'm going to transfer all
the spices into one bowl And to the spices, I'm going
to add some seasoning. First Hing, Turmeric powder, And last Red Chilli powder, So guys, our Kolhapuri Masala is now ready Let's start making the gravy. For that, first I'm going to add Oil. As the Oil starts to heat up First I'm going to add
chopped Ginger-Garlic. Saute it for a minute. Now at this stage, I'm going
to also add chopped Onion. As the Onions start to
get golden brown in color, I'm going to add the Kolhapuri Masala. As the color of the Masala
starts to get changed I'm going to add some water
so that the Masala doesn't burn. I'll keep adding the
water at regular intervals Till the Masala gets properly
cooked and the gravy get ready. As the Oil starts to separate,
I'm going to add the Eggs. I'm going to take every Egg and dock it. And place the Eggs one by one. After adding all the Eggs, I'm going to
cover the pan like for at least 2 minutes. Our Egg Curry Kolhapuri style is now ready Now for a final touch, I'm
going to squeeze Lemon in it And serve it.
