Hey guys welcome back it has been a Really busy week as we're approaching Christmas there has been lots of uh Meeting up with friends and going out And uh it has been amazing but today I Am feeling quite exhausted and ready for A relaxed comfortable meal so I'm gonna Make a one pot roast chicken with Potatoes and vegetables and the idea is It's not like uh you can make like a Cook like this for your Christmas meal But um it's just a perfect weekend meal And you just put everything in one tin And make uh it really easy for yourself So let's get cooking Stunning all-in-one roast dinner and I'm Going to prepare the gravy in this as Well So first thing I'm gonna get the oven on To One ATC fan or one 200 normal oven get This hot while I prepare the tray with The chicken so That is a massive massive chicken it Weighs around three kilo normally the Chickens are one or one and a half kilos Now the thing is that I like to get its Patch cooked which is just cut from the Middle and then it sits flat on the tray And what this means is that it I think It just takes lesser time to cook in the Oven which saves on the energy and and Time both so first thing I'm just got The chicken lime here flat I've got the
Skin on it and I'm just going to prep This just gonna get a couple of Tablespoons of kind of butter and I put This out in the morning but it still Hasn't melted or softened up very much Because it's been so cold But um yeah if you just kind of Soften it up slightly Put a good pinch of seasoning so Um Nice big pinches of salt just a lovely Big Sprinkling of pepper And I'm just going to add some Fresh herbs to this so I'm using a small Sprig of tarragon and some thyme and I'm Just going to kind of roughly break this Up So I just put this bowl of butter in the Oven because the oven is heating up and It's kind of slightly melted it which is Great Kind of roughly break it up So it um It kind of releases its flavors now I Have got a little bit of Some lemon salt now you can just grate Some lemon zest I'm just adding a little Bit of lemon salt it's got a lovely Flavor of lemon in it obviously as the Name suggests and I'm just gonna Give it a really good Mix bring the chicken over And I'm just going to
Um kind of Shove this butter under The skin Of the chicken If you are making a whole chicken Without being without spatchcocking it You can do the same thing but also you Could fill Um kind of this a little bit of this Butter in the cavity of the chicken so This is going to flavor The chicken really really well So I've made a little cut on the skin on The thigh you don't have to do that it Just my preference to Make a little cut so I can Put the butter into the thighs as well And then whatever is left just rub it All over the chicken and now I'm going To put this in the oven first Just for 15 minutes and that is the time I'm going to use To prep the potatoes quickly So I'm just gonna use four red onions And give it a good wash Obviously you could peel the onions Which is what you know you would do for Roast potatoes but I'm not going to peel The onions because I just want to keep It simple and I love this potato skin as Well so just chop them up into kind of Equal sizes which is important So I've chosen similar sized potatoes so They all cook
At the same time So just straight in a bowl foreign I've got one tablespoon here And I am using the same lemon salt You could use normal salt and just again Use a bit of a lemon zest And some Pepper lots of it and then just mix it All up This is ready to be added to the chicken Here the sizzle so it's been 15 minutes This has been in the oven for 15 minutes I'm just taking it out To just pop in the potatoes Um Around This Chicken Ready to go in back in the oven for Another 15 minutes And now I'm just going to prepare the Other bits so just you know how much Ever you need how many vegetables you Want I just want a couple of carrots and One parsnips Um and you don't have to add any of this If you don't want to or just choose Whatever your family enjoys the most So just That and just cut it into chunks And I absolutely love roasted onions so I'm gonna add a couple of onion chunks As well Just chopped into chunks
Foreign Thing with all this just put this in the Bowl and season it and just drizzle a Tiniest little bit of oil And that should be ready for our Chicken tray So it's been total of half an hour this Has been in the oven I added the potatoes 15 minutes ago and Now I'm just gonna add the Onions and carrots And I'm actually going to just lift this Up very slightly and put some onions and Carrots underneath too So this is now going to go in for 30 Minutes so that will give a total of an Hour to the chicken Spin A total of Uh An hour 15 minutes I'm just Using up all the juices And just put it on top of the chicken And this is going to go in for the last 15 minutes There it is look at that Absolutely stunning Potatoes look great the chicken looks Amazing and I'm gonna check if it is Cooked it is if you just make a little Cut on the thick part of the chicken and If the juices are clear that means the
Chicken is Nicely done I'm gonna let this rest For 10 minutes and then serve it up And here is one pan Roast chicken with potatoes and Vegetables and make it a nice gravy to Go on top of the Chicken Once this has rested for 10 minutes you can just Split it cut it as you like And serve it but I am going to just Make a couple of cuts look at that Look at that perfectly cut perfectly Cooked chicken juicy Super moist delicious Then just serve up the potatoes on the Side all the vegetables The onions oh The juices that are left just put the Tray on the hob here and just let it Boil for a second so with the juices That are left here just boil bring it to A boil and I've just got some plain Flour so I've got a heaped tablespoon of Plain flour Just stir it through And that will help Thicken the Gravy up I'm gonna use a whisk To get rid of all the lumps [Music] And this will literally just take a few
