Potol/parwal korma
ingredients :
• Potol/ parwal/ pointed gourd – 350 gm
• Oil – 4 cup
• Tomato – 1 medium size
• Cumin seeds 1 tsp
• Ginger paste – 2 tsp
• Cashew nuts and watermelon seeds paste
• Red chilli powder – 1 tsp
• Turmeric powder – 2 tsp
• Garam masala powder – 1/2 tsp
• Salt to teast
• Fresh cream
Steps:
• Peel,wash and trim both side of potol/parwal. Then half slit it from one side, turn it and half slit revere side.
• Heat 1 cup oil in a kadai/wok and fry the potol/parwal keep aside.
• Again heat rest of oil (medium heat) and add cumin seeds n ginger paste.
• Add whole Cashew nuts and watermelon seeds paste and saute for 4-5 min .
• Then add Masala(2) ,Potol/parwal, 1tsp salt ,turmeric,chili and saute for 5-6 min.
• Add 1 cup of water , cover it.
• After 2 min stir it and cook till the water reduce(semi solid).
• You can add little milk or cream (for more richness in the gravy).
• Now transfer to a serving dish.
