Prawn & Tofu Noodle Curry Pot (Chinese Style Cooking Recipe)
Welcome to Xiao’s Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.
Ingredients:
200g Raw Prawns
200g Tofu
100g Minced Pork
50g Thin Rice Noodles
1 Tbsp Chinese Curry Paste
3 Cloves Garlic
1 Medium Onion
5g Coriander
600 – 700ml Chicken Stock
Salt to Taste
Method:
1. Soak the thin rice noodle in warm but not hot water
2. Thinly slice the onion
3. Finely chop the garlic and roughly chop the coriander
4. Cut the tofu into about 1cm thick and 3cm long chunks
5. Make a shallow cut in the middle of each prawn
6. Heat 2 Tbsp oil in the wok and add the onion, fry for 2 minutes until soft
7. Add the garlic, minced pork and fry for 3 minutes
8. Add the curry paste, stir-fry for 2 minutes
9. Add the stock and tofu, a pinch of salt and boil for 5 minutes
10. Drain the rice noodles and add into the wok, place prawns on the top
11. Cover the wok and cook on medium heat for 2 – 4 minutes depending on the size of your prawns
12. Remove the lid from the wok and transfer to a dish
13. Sprinkle with coriander and serve hot
