Hello and welcome back Um today's recipe is actually one that Uh some of you have requested so it's Something that you've helped me choose For today so thank you very much I'm Making a really Delicious That goes for all the recipes by the way But I am making a really lovely Delicious creamy uh kofta Curry Um I shared a kofta Curry many years ago But this one is totally different to That because obviously there are many Many kofta curries in India Um yeah and this one is smooth it's Creamy it's absolutely amazing so let's Get cooking before that don't forget to Subscribe hit the Bell button so you Don't miss out on any recipes let's not Waste any more time and get cooking Uh in this recipe the curry is actually Cooked quite differently to any of the Previous curries I have made in and it Is simply needs some onions to start With going to thinly slice three medium Sized onions first It's hot pan and a good Um four to six tablespoon of oil I'm Gonna use some sunflower oil in here Get it nice and hot Once the oil is nice and hot add the Onions See that's why you need more oil in this Because we're gonna kind of shallow fry
The onions for a good 10-12 minutes or Medium to low heat until they are Beautifully golden And while the onions are cooking this is Going to take a little bit of time what I'm gonna do is I'm gonna boil the Potatoes and move on to the kofta Process for the koftas I'm going to take Three potatoes peel them chop them into Like a small one inch pieces and boil Them until soft Um and while I prep the potatoes don't Forget to stir the onions every few Minutes You want them golden all round So I've got the onions getting a bit of Color I've got the potatoes boiling and Here I have got four to five garlic and A bit of I don't need so much actually A little piece of Ginger I'm going to Just roughly chop these now the garlic And ginger are chopped I'm gonna take One green chili and then roughly chop This and add Um to the ginger and garlic as well Once the onions start to get a bit Golden so it's been six minutes and you Can see they're getting a lovely color That's when I will add the chili ginger And garlic and cook for another six Seven minutes until it's even deeper Golden Write this Onions ginger garlic chili
Oh my God shallow frying the smell is Insane absolutely amazing Um I kind of almost want to take a Spoonful and eat it but I won't because It's piping hot and it I'm making this For a reason But I think we're almost there with the Color of the onions There it is looking gloriously beautiful Um I have got here just a small bowl and A sieve what I'm going to do is transfer This into the sieve so that it can get Rid of any excess oil in here And obviously we are doing this for two Reasons first of all to get rid of the Excess oil and second of all we can use The oil again Uh whatever little is going to come out Um To finish off the curry So it's not going to get wasted it has Got so much flavor in it Let this sit For a good 10 minutes So the potatoes are now cooked I am Going to drain these and leave them Aside to cool down for 10 minutes and That's going to give us enough time to Let the onions drain out excess oil as Well moving on to the koftas I have got Here 225 gram of ready block of paneer you Can make your own because I've already Shared the recipe of how to make paneer
At home but I'm using ready meat today It's lovely and soft if it's too hot Just grate it or just mash it up Next add in a small onion Finely chopped now a little bit of fresh Coriander and some chopped up green Chilies Now salt to taste I'm gonna add 3 4 Teaspoon of salt again chili powder to Taste I'm having half a teaspoon because I've added some fresh green chilies as Well Teaspoon of garam masala goes in And now the boil cooled down potatoes Added in as well And all that's left to do is mash it all Together so that the spices and the Flavors come together very nicely now I Know I might have made a bit extra Mixture so I would recommend you use two Potatoes instead of three Um I am going to you make all of these into Koftas and I might use some in the curry And the rest of them I might just put in In sandwiches Like I said I might have made a bit too Much mixture Potatoes so yeah just used to also like I said Um you could use make them all to be Extremely honest they absolutely Delicious just to kind of have it as a Snack
Um so yeah when the kids come from School I might just serve some extra Ones as a snack Or you could just make as many and just Double the amount of Curry At this point it's really important that You add some corn flour just because Sometimes there isn't enough a bind and As soon as you put them in the oil they Might just disperse so always add corn Flour just to make sure that the koftas Don't split I have done that mistake Before where I have added and always add One kofta first to check if it's not Splitting because I have added all the Koftas in the oil and they all have Split and I then just have kind of messy Oil which cannot you can't do anything With it at all so in goes a good three Tablespoon of corn flour and then I'm Going to turn the heat on I'm going to Mix this up and then I'm using the same Pan I used to wash up to cook the onions I'm not washing it I'm just gonna heat It up first Just mix And then Once you've got the corn flour running Through out That's when you just shape them Into koftas You can make them into circles you can Make them oval shaped however you like
I'm just making them like flat koftas Like this Once it's nice and hot again Um you can deep fry them but I'm just Gonna shallow fry them so I'm going to Add again six to eight tablespoons of Oil And because the pan is really hot I'm Gonna put these our kofta straight in And this you can cook on high heat Because the stuff in it potatoes and Paneer already cooked so you don't need To cook this on low heat just nice and Golden Once you've given it a couple of minutes It should be ready To turn over there you go look at that Another couple of minutes And these I'm done just gonna get them out So I've got a total of 24 koftas which Is definitely too many for the amount of Curry but I'm gonna have them as snacks So while this is cooking I am going to Puree these fried onion ginger garlic And chili so the onions uh this mixture Has cooled down completely because I Stopped for a little bit and did some Other work so Um it has cooled on completely make sure It is at least cool not piping hot when You make this mixture so that goes in To this I'm going to add 3 tablespoons Of yogurt
Leave four tablespoons not three sorry And 100 mL of water and then I'm going To bleach this So the same pan and I'm just adding the Leftover onion oil Back into the pan with a stick of Cinnamon and three to four cardamom pods Foreign [Music] I'm going to add The onion puree back in there just going To add a bit of 100 mL of water to this And get this out To this I'm going to add 70 grams or two To three tablespoon of tomato puree I Have here Now half a teaspoon of salt chili to Your taste I'm adding half a teaspoon And half a teaspoon of coriander oh Sorry turmeric teaspoon of coriander and A teaspoon of garam masala give it a mix Just gonna add 100 200 mL of Water to this Look at that and now this needs Um 10 minutes on low heat covered This is going to take 10 minutes and This is the dangerous time because these Koftas are calling my name They're dangerous so do not try this at Home Wait till the curry is ready [Music] The crunch of the onions
Are really important Um A little Spice it from the chili oh so good so Good not with that can't wait Be patient it's been 10 minutes To finish I'm gonna add two to three Tablespoons of double cream [Music] If this is the only dish you're making This should serve four people but if You're serving this on the side of Something else then this will easily Serve Six to eight This beautiful part which is Of this With a little little bit of Coriander And that my friends Is creamy delicious kofta Curry Vegetarian as well I am really excited About this so so excited about trying This Um Okay I have changed my mind I think this is only going to serve four It is delicious My God that's Curry is mind-blowing That Curry Is one of the creamiest I've made Um it hasn't got lots of cream but that Whole texture of fried onions
With just the gentle spices Lovely heat coming through Oh my god with that soft golf does So lovely I am gonna make some lacha Parathas or naans those these two things Are the best things to enjoy Uh obviously chapati will do as well but LA chaparranta or naan will make it Really special mean I hope you'll try this kofta Curry Don't forget to subscribe guys and I Will see you back very soon with another New recipe bye for now
