Looking for the ULTIMATE CHOCOLATE CAKE then I have got your covered with this stunning – Chocolate Strawberry Mousse Cake! Fudgy chocolate cake sandwiched with dark chocolate ganache, fresh strawberries and the hero of the cake – the new CHOCOLATE STRAWBERRIES from @waitroseandpartners that are light chocolate mousse with a juicy strawberry compote hiding inside on a crunchy base. For the cake –
150 gms unsalted butter, softened
250 gms golden caster sugar
1 large egg
200 gms plain flour
50 gms cocoa powder
1/2 tsp baking powder
1/2 tsp bicarb of soda
160 ml boiling water
1 tbsp instant coffee granules
100 gms sour cream
For the ganache
300 ml double cream
200 gms dark chocolate, chopped
For the decoration
4 chocolate strawberries
Whisk the butter and sugar until pale, then add the egg and whisk for a few minutes.
In a bowl combine all the dry ingredients.
In another bowl combine all the wet ingredients.
Add half the dry ingredients to the egg mixture and whisk continuously. Now add half the wet mixture and whisk. Add all the ingredients and whisk for a minute.
Grease and line 2 x 8 inch cake tins and pour the cake mix evenly in both.
Bake at 180 C for 25-30 minutes. Leave aside to cool.
For the ganache bring the cream to a boil and add this to the chocolate and stir until melted.
Now place one cake, pour half the ganache, handful of chopped strawberries and then another cake and left over ganache.
Slice the chocolate strawberries into half and place them on top of the cake and serve.
Chocolate strawberries will be available in Waitrose from Wednesday!
