Ingredients list:
1kg – 1.2kg Chicken on the bone
Step 1 – Chicken Marinade
2 tbsp Cooking Oil, 1/2 juice of fresh Lemon, 1/2 tsp salt, 1/2 tsp turmeric powder, 1 tsp Chilli Powder.
Marinade for at least 30 mins
Hundi Recipe:
1 tbsp ghee, 4-5 tbsp vegetable oil
Fry Chicken in Oil for 15 mins until liquid has released from chicken then remove from pan leaving the oil.
To Proceed add:
2 Bay leaf (tez pata), 2 Cinnamon (cassia bark), 4-5 Cardimon
1 cup Diced onion, 1 tbsp Ginger, 2 tbsp Garlic paste, 1.5 tsp salt
Spices Mix Powders (tsp)
1/2 Turmeric, 2 Curry, 2.5 Coriander, 2 Kashmiri Chilli, 1 Cumin, 1/2 Garam Masala, 1 tsp Dried Kasoori Methi
1.5 Cups Fresh Tomato Puree
1/2 – 1 Cup Hot Water
4-6 Green Chilli
Fresh Coriander to garnish

Welcome everybody to another episode of Latif's inspired a lovely little recipe For you guys to do at home this is an Authentic home style dish with a couple Of steps very flavorful this is like a Staff curry chicken handy dish so you're Gonna have to follow these steps to get Those lovely flavors coming out and if You enjoy what I do make sure to press The like button helps the video push it Up the algorithm and share the content And if you haven't already make sure to You have subscribed now let's crack on With this amazing recipe a proper Chicken Handy dish for you guys to Follow at home I've got a little Assistant today Cipher off man how are You bro you okay Right we're going to be marinating the Chicken right half a teaspoon of salt One heat teaspoon of chili powder Half a teaspoon of turmeric powder And I'm going to use a half a juice off A lemon That's hyper Rock mandurionas What the lemon juice does it just Toughens up the chicken and it helps the Marination and I'm also going to use About About two tablespoon of vegetable oil And give that a mix I feel Foreign Oh So marinate the chicken and we're going
To leave this for a good 30 minutes and You can leave it overnight it'll be Perfect it's going to build some lovely Flavors Beautiful right here you go so this is The marinated chicken that's been Marinating for a good 30 minutes or so So what we're going to do step one we're Gonna fry this remove it and then we're Gonna start the curry Right Bismillah One tablespoon of pure ghee and about Four to five Tablespoon of vegetable oil Right the oil has heated up this is the Marinated chicken All right I'm just gonna let the chicken Fry I'm about five for a few minutes and Come back to it if I start mixing it now It's going to start ripping the chicken Which I do not want but it's been a few Minutes let's check up on the chicken When you put the lid on it just creates A lovely little steam which helps the Heat There you go So now it's not sticking Turn the heat up to high there's going To be loads of liquid coming out of the Chicken which I'm going to use to flavor The oil Process normally takes about 10-15 minutes Depending on the power of the gas
The lid back on Keep checking up on it every few minutes Or so And cook it for a good 10 minutes right Inspired chefs out there it's been a Good 10 minutes Chicken's cooking wonderfully have a Look There you go So basically I want that liquid to come Out of the chicken that's what this Process was for So it's about slightly Fried flavor as well But it's still going to be tender juicy Succulent I promise you so now But the gas to a very low At home this can take about 10-15 Minutes So In the restaurant it took me only about 10 minutes if you're at home it can take Up to 15 minutes So here you go so here's the chicken There you go half cooked and this is the Fat and the chicken stock that is left So now the garam masala so I'm using two Cassia box So about one inch pieces about four to Five cracked cardamom pods and two test Butter which is the Bangladeshi bay leaf And uh garam masala hits the oil It just brings out the Natural Essence And the oils from the garam masala
Wonderful the gas is on the low and you Don't want this to have that bitter Taste from the Burns from The pan so we're just tossing this up Slightly that the flavors come out now This is a cup of onion one medium to Large onion just by stock wonderful it's A lot Ginger garlic mix It's one table of ginger garlic mix that Was one tablespoon of Garlic actually I'll use two tablespoons There you go salt to taste I'm adding One and a half teaspoon of salt be Careful with the salt we marinated the Chicken So put it on a medium Heat And let all the onions ginger and garlic Soften up put a lid on come back to it In a few minutes Bright chefs When all the ginger and garlic that Rawness has gone away and you've just Cooked the onions for a good eight to Ten minutes then we go to the next Process which is adding the spices right Chefs so here are the spices going in We're using half a teaspoon these are Heat teaspoons by the way so half a Teaspoon of turmeric powder one teaspoon Of cumin powder two teaspoon of General Curry powder two and a half teaspoon of Coriander powder and this is one of my Favorite spices which is the kashmiri
Chili powder builds a lovely color a Smoky chili flavor it's not as hot as Your normal General chili powder so this Goes in When the spices hits the oil I just Spilled the aroma just builds up with a Lovely fragrance Beautiful so there you go When it hits the oil it just awakens up All the spicy it just becomes nice and Lovely right people this is tomato puree All I've done is couple of medium-sized Tomatoes just put some water and whisked It up that's all I've done so this is About one and a half cups On the foot This is going to build a lovely gravy Let this thicken up and reduce down Sides have been deglazed Got a lid on Right chefs so when you see the oil Releasing from the tomatoes tomatoey Gravy That's when we go into the next process Now I'm introducing back the chicken Make sure you get all that chicken stock So hold that chicken stock on the plate Just some water Oh half a cup it's fine So we'll crank up the heat Foreign [Music] Garam masala about half a teaspoon just For a lovely little fragrance
About a teaspoon of kasuri methi Crush it in One foot now we're going to simmer the Curry If you like some sauce make sure you add Some water now or keep it like this Proper thick Buna reduce the gust down Put the lid on and we'll come back to it In about five to six minutes right chefs Let's have a look at the chicken Looks wonderful here you go lovely thick Gravy Right beautiful chefs out there Amazing Curry Voila Chicken Handy Fantastic The sauce is hugging the chicken Absolutely gorgeous Right people look at this lovely dish Proper authentic Chicken Handy dish the Color is wonderful and the flavor is Going to be absolutely gorgeous let's Taste this now Fat let me just get a piece of this Chicken oh wow Look at that See that all that flavor all that flavor In the chicken Bismillah Thank you Wow wow wow [Music] Finger licking chicken Absolutely gorgeous
