He’s the internet star who’s clocked up more than 70,000 followers on Instagram creating gourmet meals for less than £1 using supermarket ingredients, and today Miguel Barclay is here to show us the secret to making your ingredients go far with his most popular recipe – chicken katsu curry – yours for 55p a portion.
So what are you going to cook for Today's katsu curry and so I've got to Get started but the first thing I need Are some breadcrumbs so I've got some Stale bread here over at my doing that If I could grate that for me Stale bread yeah that is the key to Caroline all the big one big one okay The scale of the bread crumb the Crispier the brick crumb coat and Becomes really fresh so my husband say Oh I almost toasters down right first Thing I need to do is do my feet in the Morning just get the rice on sorry that Was disgusting I'll just do a little Bits it's a bit noisy do you need more No that's perfect Right so and what we put my husband has Been driving me mad this morning what is Kats incoming what is that soon well It's a basically a breaded chicken with A sweet curry sauce normally served on Rice So hey well right you know right so what We're doing here is we're breading it so What we want to do is get a lid a bit of Salt a little bit of pepper also in the Breadcrumbs it's important to season and Then you get your chicken thigh in this Case you've done a science and just Press that flat yes what I've done is I've deboned it Dee skinned it and this Is what you're left with and so do you Buy them because if you can buy them Dee
Skin and things but then they're a bit More they're more expensive it's easy Well it's better to do it all yourself And cheaper who taught you to cook well In my younger years in my sort of teens And my only twenties I used to work in a Lot of kitchens normally started off as A pot washer in each of my jobs but Always managed to convince people to Sort of give me a like a better job or Two behind you there and so you just Moved just new to promoted got promoted In kitchen normally the progression was That I would be doing fruit salads yes So it went pot washer fruit salads Peeling potatoes is on a par with that And then sometimes you get to the heady Heights of maybe making risottos or Something on this morning I know I know So what was the oil and this is just a Olivoil is is what I normally use and You just want to fry it but you want to Right slowly you don't want to burn the Breadcrumbs but you want the chicken to Cook all the way through I noticed Something you put it in it didn't kind Of go that I've got it on the lowest Lowest setting so it's gonna take about Let's say about seven minutes on each Side but it really depends on sort of How vigorous the flight and then what Can we do with nosis minutes okay in Seven minutes you have to get on with The sauce so it's a really really simple
Sauce it is literally one spoonful of Flour one spoonful of curry powder so All these things you buy flour curry Powder things obviously you can use Those for lots of recipes so you're Using a lot of store cupboard stuff Eventually yeah store essentials flour Is one of them curry powder is one of Them right let me just get the heat on Here so what i'm doing here is almost Making like a little bit of a roux so It's the is the flour that actually Thickens the sauce and then the Sweetness of the sauce comes from the From the honey okay so what you do is You stir it and sort of create Essentially a paste and then what you do Is you keep adding water and it sort of Makes the paste more watery and then you Get your sauce so it's a bit boring this Step but I thought one prepared over There how did you get all your ideas for Your recipes are these tried and tested Over long pages have little wins where You think or think I mean let's try this Today see how cheap I can do probably More whims I mean I have a list of 50 Recipes that I'm working through at the Moment that I haven't actually created Yet what's what our favorite things that People like well the category is by far The favorite on Instagram at the moment It's had the most likes the most views All of my recipes are actually videos so
