Chinese Beef Curry with Potatoes & Carrots (Chinese Recipe)
Welcome to Xiao’s Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.
Ingredients:
350g Beef Joint
½ Large Onion
3 Cloves Garlic
2 Spring Onions
150g Potato
150g Carrot
1 Tbsp Cooking Wine
4 Cloves
3 Tbsp Medium Curry Powder
30g Coriander
Salt to Taste
Method:
1. Slice the garlic & spring onions
2. Cut onion into small cubes and roughly chop the coriander
3. Cut potato and carrot into bite-size pieces
4. Cut beef into bite-size pieces
5. Boil 1 litre of water in the saucepan, place beef into the boiling water and boil for 2 minutes. Remove and drain
6. Heat 2 Tbsp oil in the wok, add onion and garlic and fry for 2 minutes
7. Add beef and cooking wine to the wok, fry for 2 minutes
8. Add cloves, 600ml of boiled water, bring back to the boil
9. Turn heat to low, add curry powder and cook for about 40 minutes till meat is tender
10. Add potato and carrot, cook on low heat for about 15 to 20 minutes till tender, stir once during cooking
11. Add spring onion, coriander and salt, stir. Garnish and serve
