💙Hi and welcome to the first upload in our new cook with me series! Each week we aim to bring you new, simple recipes that you can cook in the comfort of your own home!
This week it’s Chinese chicken and potato curry!
This recipe easily serves 6 people so adjust accordingly.
To get started you will need:
1kg Chicken breast
1kg Baby new potatoes
1 cup (about 4 small) onions
2 cups (about 170g) Frozen peas
300g Goldfish brand Chinese curry paste. Available in Tesco or buy it here:
2 TBSP oil (I used Rapeseed)
900ml boiling water
Salt & Pepper to taste
To begin you will need to chop and boil your potatoes in a pan of salted water.
Next, you need to chop the onions and after heating the oil in a frying pan, add your onion and fry until softened.
Now chop the chicken breast into bite sized pieces. Add your chicken breast to the pan with the onions and fry until cooked.
Meanwhile mix the curry paste with the boiling water until it makes a smooth sauce.
Pour the sauce over the chicken and onions then add the cooked, drained potatoes and the frozen peas to the pan.
Season to taste with salt and pepper and then cover and simmer for around 10 minutes 💙

[Music] Today I’m going to show you how to make A really simple authentic taste in Chinese chicken curry using this Goldfish Chinese curry paste and the Beauty of this dish is that I serve it With potatoes in it so you don’t need Any rights or anything so what we’re Going to do first is get our baby Potatoes chopped them up and get them on To boil so I’m making this for our Family of five and I’ve always make Extra so we can have leftovers I’m just Gonna chop the potatoes whatever size You want really so I’m just chopping Them up into quarters I’m not going to Bother pin in them we just leave the Skins on like a circuses are very quick And easy respects our Tomic potatoes and I’m just going to sort my water I’ve Already put the pan on to boil because I’ve got a lot of water and it takes a Long time They put a good bit of salt in there and Then I’m just gonna add my potatoes just Get that what you get those to boil as The next ingredient is onions I usually Would use white onions or green onions But I’ve only got red so they’re Absolutely fine just gonna use a couple More because they’re not as strong so Chop those up and then we’re just gonna Fry those in a little rapeseed oil I’ve talked to my onions and what we’re
Gonna do now is chop up my chicken I’m Using chicken breast and I’ve got a kilo Here and I’ve just let it defrost it’s Just a frozen kind a kilo is quite a lot For five people but like I said we will Probably have this for lunch tomorrow And I just like to make a lot so I’ve Got leftovers so I’ll adjust the recipe Accordingly obviously if there’s only Three of you or two of you then you can Have it so what I need to do let’s get My meat chopping board these chopping Boards by the way are brilliant I’ll Link them down below they’re the Josie Josie pliers I’ve been getting on Amazon And you’ve got different ones for each Individual thing you chopped so we’ve Got a vegetable one we’ve got a fish one We’ve got cooked food wine we’ve got a Meat one so there’s no chance of Contamination So I really like these I’m just gonna Chop my chicken up and then we’re gonna Get it in the pan So what I’m going to do now is heat up My pan I’m going to put some oil in There and we’re gonna start off our Onions first This is just rapeseed oil there’s no fat In there it’s a really good non-stick Pan actually so I’ll also try to find That one very similar I don’t link that Down below as well because I’m in love Whose pen it sounds sad but when you
Cook a lot get to love your pans so I’m Just gonna wait is this dot actually Changes cover there goes from say in Thermo spot it just goes completely red So you know when you pan is hot enough And it saves you burning your pans and Overheating them alright as you can see The writings disappeared in the spots Couldn’t read completely so I’m just Gonna put my onion in [Music] Just gonna let that cook for a little Bit until it get a little bit Translucent check my potatoes [Music] So they’re not done because they’re not Coming up tonight yeah so my onions have Just gone translucent now there’s just a Little bit of color you can see all Right now just go a little bit Brown so I’m going to add my chicken to the pan [Music] [Applause] You just gonna let that Brown what I’m Going to do now is make the curry sauce And it really is the easiest one you can Do it So don’t know if you can see that this Is the brand it’s the goldfish brand and You can get this in Tesco and Sainsbury’s and pretty much any sort of Supermarket I don’t think noodles around Here do it but definitely test cases Where I’ve got this one and it’s a car
Sauce concentrate so all you do so all You do is weigh out so it says 100 grams To 300 grams of milk so I’m going to Times that by 3 because I’m making that So – so I’m making mr. so 6 so I’m gonna Put 300 grams of this in here which is Pretty much it’s about 2/3 actually I Put the pot [Applause] [Music] Now today there we go okay I need 900 ml Of boiling milk top so I’m sure boil the Kettle and then I’ll show you the mix in There Meanwhile the chicken is just coloring On the outside you can see it’s in a Little pink so we’re just gonna meet Back at my 900 mil of water I’m just Using my scale because it’s easier then Looking at the markings on the jug I Swung it I’m going to pour it into this Third Bowl so that you can see better And also if I try and whisk it in that Jug I’m gonna get it everywhere so I’m just Gonna transfer it into this bowl and you Just basically mix it up all right so Now my curry sauce is all blended in so All I’m gonna do take it over and add it Into my pan and once again it seems like A lot but don’t forget you’ve got your Potatoes to go in there and I’m also Gonna add frozen peas don’t knock it Till you’ve tried it on that the only
One I just have someone who commented And they also put these in their Chinese Curry so it looks quite runny at the Moment but as it heats up it will Definitely thicken so what we’re gonna Do now is I’m going to get my drained Potatoes cooked and I’m just going to Put those straight in we’re gonna mix Those through gently It doesn’t matter if they break up a Little bit they’ll soak up some of the Juices as well Peas I’ve just got frozen peas so I Probably ended up using about one cup of Onions so I’ve used to lots of peas You don’t want to overdo it it just Gives a nice bit of color and if the Boys weren’t having this with us which Nine times out of ten we as a family so They will be but I would probably add Mushrooms the two out of our three boys Don’t eat mushrooms so it’s not worth The hassle they’re putting them in and Having one of them I like it this is Sticking enough already I’ll use it differently show you you can See that already It’s getting really thick so I’m going To turn that right down to the lowest Heat and I’m just going to pop my lid on And then I’m going to leave that for Probably about 10 minutes and let all The flavors marry together and then That’s it done so I’ll show you it
