five tablespoons of oil the oil should be hot but Not smoking hot add finely chopped onions along
with a pinch of salt to soften down the onions Whenever making any Curry cut onions evenly
and chop them finely if you just chop them Roughly making a mix of small and large
chunky pieces your onions won't get fried Evenly and even at the end of cooking
those onions will be glaring at you you Do not want the onions to be too Brown when
they get this beautiful light golden brown Tinge on them add 2 teaspoons each
a finely grated ginger and garlic Fry the ginger and garlic for about a minute and
then it is spice thyme add a splash of water to Prevent the spices from burning and then the spice
powders go in one by one one and a half teaspoons Of kashmiri red chilli powder please adjust the
proportion of chili powder according to your Preference then half a teaspoon of turmeric powder
2 teaspoons of ground coriander and 1 teaspoon of Ground cumin fry everything in low heat for a
few seconds and then the tomatoes into the pan Along with a Sprinkle of salt to help the tomatoes
soften down faster cover for about 2-3 minutes on Medium heat after 3 minutes lid off as you can
see the tomatoes have started to soften down With the back of your spoon just give a little
mashy mashi and then cover again for 3 minutes OK after 3 minutes now you can see the tomatoes
have become mushy I like adding a teaspoon of Sugar at this point to reduce the acidity from
those Tomatoes but as I always say sugar is Totally optional but at the same time a little bit
of sweetness rounds up the flavors from all those Spices next in line is the star of the show The
shrimps you can use shrimp or prawns of any size For this recipe mix everything very well so that
each shrimp gets a coating of that Masala love Then add half a cup of hot water and cover
on medium heat for 2 minutes or 5 minutes If you are using larger prawns 2 minutes
done and now I love adding a teaspoon of Mexican Crema you can add any cooking cream
or coconut cream or you can leave out the Cream totally it will still be delicious I did
a taste test and then added salt accordingly at This point my friends when cooking shrimp
add salt near to the end of cooking to Prevent them from drying out I added a green
chili and freshly chopped coriander leaves And finally garam masala powder to perfume
the dish garam masala powder is added at the End to retain that fragrance shrimp takes
hardly five to six minutes to get done the Longer you cook it it will get rubbery and if
you keep on cooking them they will be tasting Just like a cardboard and we are not making a
cardboard shrimp Curry today this tastes best With rice please smash that like button for me and
