Ingredients List:
1200g / 1500b Mutton or lamb on the bone
1 cup oil
Whole garam masala ( 1 tsp cumin seeds, 1 tsp fennel seeds, 2 cassia bark (cinnamon) , 2 tez pata (bay leaf), 1/2 tsp peppercorns, 6 cardamon, 6 clove)
8 cloves garlic & 2 inch ginger
14 green chilli
1 handful fresh coriander
4 sliced onion
3 tsp salt (salt to taste)
2 tsp ground coriander powder
2 tsp ground fennel powder
2-4 tbsp milk powder
2 tsp cumin powder & add 2 sprinkle ground cumin powder in the end for garnish
drizzle of butter ghee if preferred and garnish with fresh coriander

Welcome everybody to another episode of Leticia inspired right the mutton Biryani or the mutton pilau Martini Whatever you want to call it I cook this Amazing dish behind the scenes and all You guys wanted this recipe so here you Go The spices the garam masalas ghee the Blended spices Lovely mutton you can use lamb if you Don't have mutter no problem for onions Just sliced up coriander Green chilies garlic ginger oil let's Stop cooking this amazing pilau dish Let's have a look Right let's make the masala eight cloves Of garlic some ginger so this is about One inch cubed or just over it's fine About 10 12 green chilies going in Keep the rest for garnish All right let's start the gas on Bismillah To my pot I'm using one cup of Cup of before I got my ingredients ready This four cups of basmati rice I just Washed it and soaked it in cold water And it needs to be in cold water for a Good 30 minutes or so so while I'm Cooking the mutton or if you're cooking The lamb whichever you have make sure You wash the rice soak it in water at Least 30 minutes so let's start cooking Right this is four onions just sliced up I'm gonna use it for fried onions
Um I don't want the moisture from the Onions I just want it to be for the Flavor so I need that fried onion flavor Hence I've used a lot of oil Or it is heated I'm gonna add the onions Now Right amazing chefs out there this has Taken me a good 12 13 minutes so this is On the highest heat at whole just remove The onions Here you go probably fried onions nice And caramelized and that's going to Bring out fantastic flavor to this oil Is flavored in that onion we're gonna Add about just over one kg of mushrooms Between one [Music] Basically searing the meats All right there's plenty of meat so I'm Going to add some salt [Music] One That's good three teaspoon of salt Right all you amazing chefs out there The meat has been cooking In that Oil for a good 10 minutes Now I'm adding the garam masala this is Fennel seeds good heat teaspoon of Fennel seed uh this is cumin seed good Teaspoon of cumin seed this is the Cassia Buck which is the Indian cinnamon Two two inch sticks lovely fragrant Quantum flavor peppercause just less
Than half a teaspoon just for that Little flavor to come out that spice Flavor cardamom about six cardamom pods Two Bangladeshi bay leaf which is the Test pattern and some clove about six Cloves so they go in It's going to build a wonderful flavor As well as that fragrance Because that's the garam masala Let that hit the oil and cook in that Much in fact now if you can't get hold Of mutton you can use lamb I'm going to add this is the Blended mix On from the chopper blender so basically Your Ginger your garlic your green Chilies Lovely I'm going to use all of her When you're cooking a lovely biryani Or a pillow It's good to use a lot of ginger and Garlic gives an amazing flavor Wow House is smelling so good So that is cook in its oils then we're Going to go to the next process Right since the ginger and garlic has Gone in it's been a few minutes Now we're gonna add Spices so firstly this is fennel what I Did just slightly toasted it and Grounded in my pestle and mortar and This is two teaspoons good heat Teaspoons of fennel this is a must you

So half of that Gone in it's going to soften up With that water Beautiful Mutton it takes a good Half an hour 40 minutes to soften up so Put the lid on We'll get your timer on and come back And check it every 5-10 minutes and this Process should take about half an hour 45 minutes until the meat is soft Wonderful Right chefs I forgot to mention Put the heat to a medium Medium high ish and let it simmer all we Want is just to meat to soften up on all That liquid to reduce down that's all we We require at this point Right beautiful chefs out there this has Been cooking away in a good 35-40 Minutes Look it up Lovely caramelization Before those onions And all that liquid that has evaporated Now Wonderful I'm fasting so I can't taste the salt Content However I'm confident it should be fine So there you go beautiful check on the Meat Yep Wonderful if it were to be lamb it
Almost would be breaking away when you Cook it for a good 45 minutes to an hour however this is Mutton so it just stays a bit tough but It's wonderful flavor mutton is Right the meat has been booned look at That all that oil has separated And now My Pan wasn't hot big enough so I'm Gonna just got something slightly bit Bigger So it was four pots of four cups of rice I'm using Six cups of water one Six cups Of water now I'm using milk powder this Is one of the best milk powders you can Get a needle brand you can get them from The local supermarkets One Two Three Four good heat tablespoon rice goes in Let's add the mutton back in So I used four cups of Um rice and six cups of water that's the Ratio Right now The liquid has been absorbed by the rice Turned the gas off I've added a bit too Much milk powder I've got a bit excited Uh what happens is it can tend to stick At the bottom so give it a nice little Mix
Smells Divine by the way [Music] To Free Or Five green chilies the rest of the fried Onions Coriander Beautiful Colors We've got to add a Sprinkle of cumin so You should be just on top of the rice But this is fine Good Two pinches you can add a bit of pure Butter if you wish at this point uh just Break drizzle it in I am not going to Put the lid on Turn the gas back on Heat up the cover right it's been a few Minutes the tub is nice and hot Put it on a very low gas So we're going to cook this on a low gas For a good 15 minutes Right the rice dish has been cooking for A good 15 16 minutes on this low gas Now I'm gonna turn the gas off And let this rest we're going to rest it Ideally for about 15-20 minutes and then We'll come back and see how the rice is Cooked be very patient and be confident That your rice is going to be cooked to Perfection so it's been resting for a Good 20 minutes
