220G ONION, 25G GARLIC, 15G GINGER
1 TSP SALT
2 TSP CURRY POWDER, 2 TSP CORIANDER POWDER, 1 TSP CUMIN POWDER, 1/2 TSP TURMERIC POWDER, 1.5 TSP KASHMIRI CHILLI POWDER
2 PINCH KASOORI METHI, 2 PINCH GARAM MASALA
220G TOMATO PUREE
1/2 LIME OR LEMON (2 WEDGES)
1 TBSP SUGAR
FRESH CORIANDER LEAVES (HANDFUL)
BOILING WATER AS DIRECTED IN THE VIDEO.

Welcome everybody to another episode of Latif’s inspired today a proper British Indian restaurant classic check this out Chicken pathia look it up look at that Amazing lovely thick sauce we’re gonna Put some lovely lime juice in there for That Tangy it’s gonna bring out that Amazing those chilies oh wow this is Going to be gorgeous sweet spicy sour Dish and it’s a it’s an Indian Restaurant classic it’s been popular on The menu for years and years since the Bir restaurants uh started so make sure To watch till the end for this amazing Recipe chicken pathia my mouth is Watering this is going to be gorgeous Beautiful People popular classic Indian Restaurant dish so chicken pakia using Chicken thighs cut into cubes so this is Going to be all we’ve got the lime ready There it’s going to be nice sour loads Of spices look at those chili powder Kashmiri chili oh my God Everything’s ready now let’s start Cooking beautiful right so let’s turn The gas on Bismillah I’m gonna need four tablespoons of just Vegetable oil I’m gonna add one tablespoon of pure Butter ghee right paper oil has heated Up so now so this is a cinnamon stick Which is the cassia Box about one and a Half inches two cracked cardamom pods One bay leaf which is the test patter
I’m adding a good tablespoon and a half So about 25 grams of um Garlic and about uh 15 grams of Ginger just smashed up fresh Ginger garlic this is about 220 grams of Just diced onions I’m gonna add about a teaspoon of salt Salt to taste people so it’s just going To soften up and dry out the moisture From all the vegetables the ginger and Garlic the onions You just want to get that caramelization Take that rawness away from the jimjam Garlic Beautiful The gas is on a high heat at the moment Now as this is a one pot dish people I’m putting a lid on I’m lowering the Gas to a medium And I just want to soften up the onions This process normally takes a good uh 10 12 minutes Etc so keep an eye on it Unless you soften up the onions Right people a quick little tip the Onions Ginger and Garlic’s been cooking Away for a good five six minutes tip is If you just drizzle About half a cup or a cup of water it Just deglazes the pan and all that Ginger and garlic that has stuck to the Pan gets it all out and just softens up The onions a bit faster so the onions Are in there now put it onto a high heat And just give it another
Few minutes And all the onions will soften up and All the ginger and garlic cooked and Then we’re going to go to the next Process right people it’s been a good Five minutes since I’ve added the water On a high heat it’s been simmering away Foreign [Music] Put the gas on a low Now we’re going to add this lovely spice Mix every dish you have to have a Different spice mix because all not all Dishes are the same obviously so on this One because it’s a spicy dish like a Madras shrimp I’ve got two these are Extra hot chili powder so General chili Powder I normally use the e-stem brand And I recommend it highly this is the Ground coriander powder so there’s two Teaspoons of ground coriander powder Half a teaspoon of turmeric and this is The general curry powder this is British Asian Indian restaurant style of cooking And we use curry powder in most of up And down the restaurants so I always use It and it enhances the flavor it’s Called fennel seed powder Etc there’s Quite a loads of spices in there so it’s Really nice and I’m using a kashmiri Chili powder For the color and it’s also got a lovely Flavor so one one and a half teaspoon of Kashmiri chili powder it’s a lot
Now spices are held in can stay in those Packets for for ages so it can get a bit Damp so just be careful hit it onto the Oil just cook it out for a minute or so In that nice hot oil it just awakens up All those spices like when you’re Toasting the spices Etc so this is a Fantastic technique that I always do hit It on the oil Wake up you Beauty On the foot now I’ve pureed some Tomatoes as you can see the seasoned Skin and all Um it’s got the lovely color and flavor This is about 220 grams this is going to Build a nice little thick gravy since We’re not using our base gravy so that Goes in some of the one foot this is Wonderful I mean people use passata Chopped Um Tomato tinned I find this is the more Flavor so just get yourself A fresh tomatoes just chop it up and Whack it and you’ll see the difference It’s wonderful Goat crank up the heat Boon up all the Spices together just relax for a bit be A bit patient cook everything together And let it become nice and mushy and Then we go to the next process wonderful Right beautiful people look at the color This is wonderful it’s only been a few Minutes for people check this out

To be gorgeous to get the sweetness Because Patti has used a bit of sweeten So you can use like a mango chutney if You wish I mean I bought this for about 1.89 from the shop special offer you can Use mango chutney if you wish maybe one Tablespoon or if you don’t have mango Chutney at home just use one tablespoon Of sugar so I in my restaurant we Normally use the sugar for a bit of Flavor so one good tablespoon people Get that mix you’ll see what a Difference this line makes and that Sugar it’s going to elevate the spice Level to the next Dimension I promise You this is a wonderful dish very Popular Classic Indian restaurant dish look at That colors amazing Now We’re going to put on a medium Heat And cook until it’s done so no water Because the Patty is nice and thick guys If you want it to be Saucy just add one Cup of boiling water at this moment However I’m not going to I want a nice Thick sauce people so medium Heat Put a lid on And we’ll come back to it in about 5-10 Minutes Right beautiful people it’s been a good 15 minutes since the chicken’s gone in So dried cassiro messy messy leaves Good a couple of pinches this is a
Fantastic Umami gives it a slight little Bit of taste to it and some garam masala So good two pinches Garam Masada wonderful look it up Coriander leaves For all that flavor to intensify put it On a low heat and cook this for another Five minutes Just leave the lid on gas is low just Leave it alone it should be fine you’ve Just mixed it so it’s not going to stick At the bottom and come back to it in Five minutes Yo look hello Mouth is watering because whenever You’re cooking spicy food or sour you Just get all that Chemical reaction in your mouth look at That Oh nice thick kind of dancing together It’s hugging each other holding hands Beautiful now turn the gas off and serve Oh wow these are the Currys that built The industry Fantastic for our fathers Has done a wonderful job creating these Dishes for us to make and now for you Guys can make at home look it up Beautiful Chicken pathia Right Beautiful People this Is a proper British Indian restaurant Classic a chicken patio look it up This is beautiful now there you go
