Welcome everybody to another episode of Latif's inspired a lovely little episode For you guys today to enjoy a coconut Spinach chickpea Curry this is Absolutely gorgeous check this out Oh wow You see there amazing chickpea lovely Baby spinach Oh wow So I'm going to show you Exactly how I've cooked this amazing Dish and I'm also going to taste it for You Oh wow check this out Lovely plump juicy chickpeas Wilted spinach Creamy velvety textured coconut milk So make sure if you enjoy what I do Press the like button if you haven't Already make sure to subscribe and on The comment section write any messages Or any recipes that you'd like to see my Mouth is watering and I can't wait to Taste this right all you wonderful chefs Look at these lovely chickpeas from a Can Sainsbury's washed baby spinach green Chilies coconut milk That's my spice mix fresh tomato pure Just whizzed it in a mixer blender and All the other ingredients Let's start cooking this amazing dish Turn the gas on Bismillah To start
Some oil Six to eight tablespoons of oil of Choice I'm just using vegetable oil here Right once the oil is heated up add the Onions That's about one cup of onion there For the onions to soften up we're using About one and a half teaspoon of salt Salt to taste So you can use more or less A little tip for you guys if you're Using less oil you can use a drizzle of Water to soften up the onions This prevents the onions and Getting burnt and having that bitter Taste This creates a lovely little steam and Just softens up the onions wonderfully For That Sweet Onion flavor Beautiful So all you're going to do is just reduce Down the liquid and once the onions are Nice and soft then we're going to go to The next process so I'm cooking on a Very high gas you at home this will cut This will take about a good 10 to 12 Minutes to soften up the onions Where all you wonderful chefs at home Adding the ginger and garlic now now the Onion is slightly softened up and the Steam from the liquid the water sort of Has evaporated so need to fry out these Ginger and garlic mix so this 50 Ginger And 50 garlic and I use a little bit of
Green chilies and coriander but if You're at home just use maybe a teaspoon Of garlic and teaspoon of ginger That aroma Is wonderful very fragrant very aromatic So let the rawness of the ginger and Garlic sort of go away add another Drizzle of water if you wish This would just prevent the burning Process like I mentioned earlier and Just soften everything up and slightly Bring out the lovely sweetness and the Pungency of the ginger garlic Etc Absolutely gorgeous so it's been a good About 10-12 minutes for you at home this Process can take up to about 15 minutes Here are your spices so I've used about Good two teaspoons of coriander powder Just less than one teaspoon of turmeric Powder and I'm used I've used about two Teaspoons of red chili powder these are Extra hot chili powder I want a nice Oomph to it this is General curry powder Just over two and a half two teaspoons Of curry powder heat teaspoons that is And I'm using cashmere chili powder I Love this this is like Um chilies on steroids a lovely amazing Color so rather than paprika this is Kashmiri chili which gives a wonderful Color as well as flavor so the all the Spices go in Bismillah Look at that colors of Bangladesh India Pakistan Kashmir give that a little mix
When you mix the spices in that hot oil It just awakens it up so basically Within seconds I'm adding the cold Tomato puree so this is about two Tomatoes just whizzed up On a blender This is what creates that amazing gravy Oh wow so that's tomato has cooled Everything down the natural liquid from The tomato is going to release and I Want that rawness of that tomato to go So I'm going to cook this down Reduce it And then go on to the next process Beautiful right so now the tomato Has thickened up Now we're adding these amazing chickpeas That's one can Now we're going to add this baby spinach Washed and ready to eat Now we're gonna add This coconut milk so you can get like Sort of coconut thickens up at the top And then you've got that liquid at the Bottom so just give it a nice little mix With a spoon or something and then just Add it in Oh wow Foreign 's amazing I'll give everything a nice Little mix Now let this come to a simmer Come back to it shortly This is going to be amazing
Silk Hill smooth Amazing thick texture Now we're just simmering down to that Sort of consistency that I like it Yep that's almost sticking to the spoon Beautiful Now it's coming to a finish this is one Just over a teaspoon about a tablespoon Of kasuri dried methi Get that little Umami there Slight bitter to it Wonderful We have coriander To finish Oh wow Now a bit of green chilies For a nice little lift and textures and Flavors beautiful Wonderful Lovely thickness Yep Wow Oh my God beautiful let's taste this Baby Turn the gas off Voila This is amazing Coconut spinach chickpea curry with These amazing spices this looks Absolutely gorgeous mouth is watering Let's give this a taste and if you enjoy What I do make sure to hit the like Button and subscribe to the channel if
