Welcome everybody to another episode of Latif's inspired right I've had a busy Shift and now there's a couple of tables I think uh just finished the meal and I'm going to be cooking the stuffed Curry check this out There you go this is mutton fresh from The Butchers and it's Ramadan around the Corner it's going to be a month for Fasting month of eating but don't Overeat today I'm going to be showing a Lovely little mutton Muttony mutton pilau this is going to be Very simple and I'm gonna I'm Gonna Keep All the ingredients as low as possible So anybody can make this at home I'm Doing a big batch however if you want a Small portion maybe a house of four or Six today for the stuff I'm going to Show you this is about 2 kg mutton and I'm going to be cooking this wonderful Pillow dish now let's start cooking Bismillah Thank you Right let's turn the gas on Right I've measured out some basmati Rice so I've got just a pint sort of Glass three and a half pints off just Rice gonna wash this and leave it in Water for for about 20 30 minutes if Possible so this is one cup of vegetable Oil One of the best brand ever so one Three big tablespoons of cheese so this
Is about what about 2 kg of mutton nice And fresh straight from the butcher so That goes in this and a lot So basically just searing the meat On our Lovely mutton chop All of those bone marrow Wonderful So it's a fair bit of meat so I'm gonna Need a fair bit of salt So That's about two About three tablespoon of salt I'm getting the spices ready let's check Out I've got these cumin seeds nice Little bites when you bite into a fennel Seed cardamom and cinnamon got Bangladeshi bay leaf which is a test Putter but some ground spices so it's Just basically so about one and a half Tablespoon of fennel ground fennel one And a half teaspoon of ground cumin and About one sorry one and a half Tablespoon and one tablespoon of ground Coriander and we're going to be using This is a sort of Bangladeshi influence On the biryani So I'm going to be using powdered milk This lifts the flavor towards the end It's absolutely gorgeous I promise you So do not leave this out and once again I will do a nice little recipe for you Guys to make at home because this is a Big batch so we're going to need a good
Cup Look it up look at that milk good Calcium so let's check on the meat Literally be in about five minutes Let the natural Liquid release From the button why are you eating come Here come here This is a last night's chicken Cheese Kashmiri Pakistani food with cheese yeah Subhanallah So let the salt penetrate in there and Now we're gonna add these lovely garam Masala [Music] Foreign Garlic going in so this is ginger garlic Coriander green chilies and green pepper Lovely fragrance and a lovely flavor It's about four good Spoon Or four and a half For a nice Mutton style Biryani you need lots of Ginger for that flavor These are green chilies on steroids Massive so there's two four Five Six seven Eight nine ten eleven twelve thirteen Fourteen There you go it's amazing lovely colors Green chilies there for that spice we're
Not going to be using chili powder right I've got about four onions just normal Onions Some fried onions So let that become nice and golden Smells wonderful the fried onions look At that Golden goodness Your steaming away Fried onions done check this out Now we're gonna whack this into the Mutton Foreign When you have the onions nice and fried It doesn't become mushy and it can get Caught at the bottom which I'm trying to Avoid because this we don't need the Onion the onion is like a thickener uh We don't need a thickener we want that Flavor that fried onion flavor is Wonderful in a Biryani so we have this Onion hopefully the onion is not going To release anymore Um natural juices because we've dried Out Put this back Rest of the onions I'm gonna leave it for garnish Voila right everyone knows the feeling When you're tidying up the kitchen and You get a last order so come check out The mutton first I just lowered the gas since I got a new Order oh look at that
Place So you got that The oil is separating That rawness of the ginger and garlics Oh my God check this out yeah Beautiful huh let me show you this check This check this mutton chop Beautiful Now all the flavor that Meat that fat is rendering out Look at that Put this lid on gas on a medium And I've got two chicken tikka masalas So let me start cooking the masalas put Some ghee in Sugar Ground almond this is a lovely little Korma sauce that we make So ground almonds Coconut Loads of different nuts Butter So toast this up in the ghee I said please So this is our in-house Masala sauce so Good two Chef spoons it's good business Finished and the last portion finished Beautiful Single cream Is fantastic Fresh chicken tikka from the Tandoor That's two portions Oh look at that look at that color There's a nice little mix
Now the base it's all about the base One All right the meat is looking wonderful If you were to smell this fragrance It's absolutely to die for Now all those lovely spices going in Wonderful look at that lovely dark Rich Color from the meat It's gonna be a wonderful biryani So Ginger Garlic's gone in the oil the Tea the salt the green chilies I said the meatloaf Dinner Check this none out look at that Beautiful Lastly So I've added the spices it's hit the Oil so it's um all the flavors it should Come out at now so put some water This is going to soften up the meat and I need a good half an hour Just to cook in a medium Heat This is lovely Now we'll come back to this in a good 25-30 minutes while we're keeping on it And give it a mix every 10 minutes it Shouldn't stick at the bottom uh because There's plenty of water so wait 25 Minutes with a bit of patience Right I'm going to turn this big massive Oven on So basically preheat the oven So in about half an hour I'm gonna whack The Biryani in and then it's going to
Take 20 minutes to cook in this lovely Amazing oven It's been simmering away What's up Look at that lovely that bone marrow Wonderful flavors the smell of the meat It's delicious creating a lovely little Lamb stock that has dark color fried Onions a ginger garlic all those amazing Spices Now let's check up on the chicken tikka Masala bit of a mess Voila Look at that custard consistency as I Always say nice and thick Give it a whirl Now let's play let's put it in the Container Rich buttery creamy Sugary Spicy velvety Gorgeousness oh look at that those Almonds And the nuts And the Coconuts Wonderful Right the mutton has been cooking away For a good About 30 35 minutes ideally I'm in a bit Of a rush because the guys need to eat But if I was cooking this at home for a Good one hour one hour and a half and a Nice simmer so the meat softens up Wonderfully but let's have a look
Straight this calendar It's okay it's like got a bite to it but As I said the guys are hungry so Now we're going to go to the next Process so this is the rice Perfect so just underneath an inch So the Tandoori Chef he normally Cooks Lovely races and his measurement is Precise so I'm hoping For the texture of the rice to be Absolutely perfect So when you cook a lot when you cook a Biryani you have cooked the rice and Then you add it to your Meats however if You cook it this way you get all that Flavor all that fat from the mutton the Lamb chicken whatever it is Into the rice so all those rice every Single green has a flavor So now we just want the water to be Absorbed by the rice the oven is on and Then we're going to foiler top and then Put it into the oven Right at this moment of time I forgot to Add the milk so this is one cup of milk Going in this milk powder milk powder is Wonderful it's nice sweet and very Flavorful and bangladeshis we love this Flavor Whenever we're having a cup of tea Instead of using the proper milk we like To use the powdered milk in Bangladesh Very popular So I just remembered in time
There you go the milks dissolved Wonderful now I'm going to use asda's very own [Music] Ground white pepper this is going to Give it a lovely oomph It's not going to change the color it's Not going to be overly spiced It's not gonna Give it any unusual flavors certain Chilies have certain flavors some ground Cumin Toasted ground cumin This is just gonna Build a lovely fragrance and that last Bit of flavor on the rice Wonderful There you go people Beautiful We'll come back to it in for five Minutes let's check up our Wow Beautiful smell these are the lovely Fried onions Oh amazing Amazing Wonderful Coriander Turn the gas off and we're going to foil It up Foil paper please Boil this up This is going to go in the oven for a Good 20 minutes
There you go shoulder There you go Bismillah Right we've waited a good 20 minutes for The oven and ideally I would have liked It to rest for a good 15-20 minutes so It cools down and the steam just um Calms down kind of thing but let's have A look Very hot Now Moment of Truth [Music] Subhanallah whoa What's anywhere [Music] Oh you know what you need to listen to This It's the fat sizzling away still this is Why I needed a good 10 minutes at least To rest Guys are hungry Oh okay This is gonna be very flavorful All that gelatinous fat from the meat Fried onions Coriander Together [Music] [Music] This is What's up [Music] Looks nice which one might give you one You enjoying
