Hey guys welcome back to my channel I'm Bringing you uh another delicious easy Stunning recipe so a few years ago I Wrote this book called Um chetna's healthy Indian vegetarian For all those people who keep asking me About vegetarian vegan food most of the All the recipes are vegetarian and most Of them are vegan the ones that are not Vegan you can kind of change them and Make them vegan so the recipe is from This book which is why I mentioned this Um and they are these sporty potatoes Absolutely stunning potatoes are coated In this amazing mix of spices which is So delicious and they crisp up the Potatoes Let me stop talking and let me start Cooking don't forget to subscribe guys Hit the Bell button so you get a Notification every time I share new Recipes which is two to three times a Week right let me get started let me Start cooking First things first going to chop them up And boil four to five potatoes I'm using Maris Piper but you can use Any good all-rounders So this should take around 8 to 10 Minutes basically use whatever method You use and boil the potatoes And while the potatoes are boiling I'm Just going to start prep on the Puri Which is the spice mix
So the potatoes are boiling I'm going to Start on the porina Podi is made with Ghee but if you want to keep it vegan Absolutely fine if you want to use oil Instead of ghee for the Masala so Um yeah I'm gonna use ghee but you can Use whatever you like so make sure you Have a nice hot pan I have reduced the Heat to low otherwise the spices will Burn and I've got two tablespoons of Ghee in here and I'm gonna add one Tablespoon of Chana Dal in here and let This cook for a couple of minutes Don't do that on high heat because they Will burn instantly you want to cook Them on low heat for two minutes You can see that the lentils have become Golden from yellow they've become really Nice and golden and that's when I'm Going to add a teasp tablespoon of Coriander seeds whole And a couple of dried red chillies Just gonna cook this for a minute So that's it it's had a minute I'm gonna Turn off the heat On my recent trip to India I made this Amazing woman who goes to different kind Of handicrafts in villages in Gujarat And then sells these amazing Handicrafts so from Pottery to kind of Traditional kitchen items and I found This beautiful terracotta pestle and Water which is traditionally used so Though it's terracotta it's sturdy it's
Solid and this is what I'm going to use To grind the body today in my video Just look at that beautiful isn't it Just how amazing Before the stones and marble pestle and Mortar there used to be this lovely Terracotta one so you could use a any Pestle and water or a mixer but you Don't want to grind it to a fine powder You want a little grit and a bite to it So best to use a pestle and water And there it is As you can see I haven't ground it to a Like a fine powder I'll show you a Close-up Look at that it's got the lovely bite Smells incredible and this is going to Be magical so the potatoes have boiled And I'm gonna it's they're piping hot so I'm gonna let them sit for five minutes Before I peel and chop them up So moving on I've got another pan I'm Just gonna Let it heat up fast I'm gonna add A tablespoon of ghee Now once this is hot I'm gonna add a Teaspoon of black mustard seeds and make Sure you reduce the Heat Let them sizzle They started to pop so I'm gonna add one Tablespoon of urad Dal and one Tablespoon of Chana Dal and then reduce The heat to cook for two minutes And you can see that it's been two
Minutes and the color of the lentils Have changed to Golden you don't want Them to become Brown this is golden is Fine I'm gonna add a few Curry leaves And a big red dried red chilli Chocolate Right it's time to peel and chop the Potatoes Next I'm going to add a pinch of Asafoetida or Hing if you haven't got That you can just skip it I'm gonna chop up these potatoes into Small cubes roughly chop them they don't Have to be exactly the same because they Are all cooked anyways so it won't make Any difference I like The Rustic look of this dish Where it's not like You know Beautifully perfectly looking But tastes amazing next goes in half a Teaspoon of turmeric powder 100 mL of Water so it doesn't burn Half a teaspoon of salt And now I'm gonna throw in the cooked Potatoes A good mix And as soon as you've added the potatoes You can see that the potatoes absorb the Liquid Great I'm gonna add another tablespoon Just a little bit And now I'm going to cover and cook this On low heat for 10 minutes
I just want to quickly tell you about This recipe now pori is a southern Indian spice blend and like every other Spice Blends every family has their own Spice blend now this is not my recipe uh Years ago when I was writing this uh Book Um I went to India to meet some home Cooks who were ready to share their food With me and I met this amazing woman Called jeshri who welcomed me into a House and she taught me these Puri Potatoes and she cooked them for me and It was just absolutely delicious and I Had to put it put that recipe in the Book and these are not ordinary potato This is next level delicious it is Probably the best Aloo sabji you would Ever have Okay guys so this is the exciting bit It's been 15 minutes exactly I've cooked This on medium heat so that I could get Some like sticky bits at the bottom Let's see Oh yay I got it look at that okay let me Oh Beautiful Oh my God that is what makes this recipe Are amazing right time to add the Puri To this Full blast and I'm gonna give it two Minutes on high heat I'm gonna stop stirring Let this cook up for two minutes
Okay guys it's had it's two minutes on High heat Oh the smell the aroma is incredible Time to Plate this beauty up Foreign [Music] Guys I don't know how to tell you that You've really really need to try this Recipe if you have been cooking some of My recipes I don't say this lightly this Is probably one of the best potato Dishes you would have tried Ever Right time to taste it It smells Just Amazing absolutely amazing the sun has Come out just to say that um I'm right It smells amazing Oh my god oh You might think this is very spicy but Art and use very very hot chilies I used Dried kashmiri chilies If you want it even hotter you can use Really hot red chillies But for me this is absolutely Amazing you can eat this with some dosas The recipes on the channel you can eat This with chapati you can have it with Dal and rice or sambar and rice Or if you want to wrap this up in a Chapati and make a chapati wrap with Some coconut chutney oh my God I can Keep going on and on so I better stop
